Fatayers are found throughout the Arab world in pastry shops and market stalls in different shapes and fillings. In this recipe, fatayer balls are filled with cheese, green zaatar (Thyme) and garnished with sesame seeds and Nigella Sativa Seeds.
To prepare the filling: In a bowl, mix white cheese with green thyme and olive oil.
On a floured surface, spread the dough, then cut it into equal circles.
Spread the filling over the dough circles, and close them tightly to form equal balls.
Grease the oven tray with oil, and place the fatayer on it.
Whisk the egg yolk with a pinch of salt and black pepper, and brush the face of the dough with egg wash.
Sprinkle some sesame seeds and Nigella sativa seeds on top of each dough ball.
Bake for 20 minutes at 480 F (250 C).
Serve hot or warm as desired.
