Tomato Kibbeh is a popular dish in the Levant, consists of tomatoes, Bulgar, onions and kibbeh spices. It can be served as a side dish or a kind of mezza.
Soak tomatoes in hot water for several minutes, so they can be easy to peel off.
Peel Tomatoes and cut into small cubes.
Using the food processor, blend onions, kibbeh spices, and a cup of bulgar.
Transfer the mixture to a bowl. Add 2 cups of bulgar, tomatoes, salt and olive oil.
Mix all ingredients well with a fork or by hand.
Chill until ready to serve, and serve cold.
Place in a serving bowl. Drizzle with olive oil and garnish with mint leaves. Serve with pita bread.
