Stuffed Chicken with Freekeh

The Stuffed Chicken with Freekeh is a delicious Arabic dish. It is distinguished by the smokey flavor of toasted freekeh, a grain that is full of protein and fiber. Stuffed Chicken with Freekeh is wonderful for any occasion.

 3 cups freekeh
 1 tsp cumin
 1 tsp cinnamon
 1 tsp coriander, grounded
 1/2 tsp black pepper
 3 tbsp butter or ghee
 1 large onion, finely chopped
 3 cloves garlic, crushed
 1 celery stick, finely chopped
 2 large tomatoes, peeled and chopped
 1 1/2 tsp salt
 4 cup chicken broth
 1 cup tomato juice
 2.2 lbs (1 kg) whole chicken
To Serve:
 fried nuts

Soak the Freekeh in water for 3-5 minutes, then wash and drain.

In a small dish, put cumin, cinnamon, coriander, pepper and a teaspoon of salt, then mix the spices.

In a medium cooking pot, add the butter, put the pot over medium heat. Add onions, garlic and celery. Stir until the vegetables soften.

Strain freekeh from water and add it to the onions. Stir the freekeh for 1 to 2 minutes. Add half the amount of spices mixture. Add chopped tomatoes and stir for a minute or two. Add salt, half the amount of broth and half the amount of tomato juice. Cover the pot and let the freekeh cook for 20 minutes. Do not completely cook the freekeh at this point. Take about a cup of freekeh to stuff the chicken and leave the rest in th pot. Make a hole in the center of the remaining freekeh in the pot.

Spread the rest of the spices on the chicken and rub so that the spices are distributed efficiently over the chicken. Stuff the chicken with freekeh. Place the chicken in the center of the freekeh in the pot. Add the rest of the broth and tomato juice.

Cover the pot and leave it on medium heat for about half an hour, then reduce the heat and let the chicken cook until it is completely cooked. Lift the lid and put the pot under the oven grill for a few minutes, to roast the chicken.

Tip: You can cook the freekeh with chicken in an oven at 355 F (180 ° C) for an hour until the chicken and the freekeh are cooked.

Transfer into a serving dish, put the chicken on the freekeh and garnish with fried nuts.
