Sfiha - Lahm bi Ajeen or also known as 'Arabic Pizza' originating from the Levant, is flavorful flat bread pies with spicy ground meat toppings.
In a deep mixing bowl add 2 cups of flour, yeast, sugar, and milk powder. Mix ingredients well. Add two cups of warm water and mix with a manual hand beater until ingredients are incorporated. Put aside for 10 minutes.
Add the three remaining cups of dough to the mixture, 1/2 cup corn oil, 1/2 tsp salt. Mix dough well with your hand until you get a soft dough. Cover and put aside for one hour to rest.
Meat topping preparation: Mix well all ingredients together.
Preheat oven to 400 F degrees.
Once dough is ready, cut into medium size balls (makes about 20 balls). set aside and let it rest for five minutes. Roll out each dough ball to about 8 inch circles and 1/4 inch thick.
Spread about 4 tablespoons of meat topping evenly over each dough round. Press gently with your hand on the topping to stick with the dough.
Bake in the oven at 400 F degrees for 10 minutes or until dough turns a bit golden .
Serve hot along with Ayran Yogurt drink (Laban Ayran) if available.
