Potato Kibbeh

Potato kibbeh is a vegetarian dish made of boiled potatoes, bulgur, onions and kibbeh spices. It can be served as a side dish or cold meza, and it is most famous in the Levant.

  2.2 lbs (1 kg) potatoes
  2 cups bulgur
  1 teaspoon salt
  2 tablespoons olive oil
  1 onion
 1 tablespoon kibbeh spices (marjoram, dry mint, peppercorns, rosebuds, cumin)

Boil potatoes well for about 45 minutes then peel and blend in the food processor.

Using a food processor, finely blend the kibbeh spices, onions and a cup of bulgur.

Soak the rest of the bulgur amount with water for 15 minutes, then mix thoroughly with potatoes and spices mixture.

Place in a serving dish and garnish with olive oil. Serve it with pita bread, mint leaves, radishes and sliced onions.
