Omani halwa is a soft, sweet gelatinous mixture flavored with saffron, cardamom, butter, nuts and rose water. A delicious sweet treat to enjoy with coffee.
Soak saffron in rose water, then add cardamom. Put the mixture aside.
Heat a large skillet over the stove and spread a layer of sugar. Let it dissolve with constant stirring.
Reduce the heat and sprinkle the remaining sugar to get the caramel.
Cut the butter into cubes and add them over the caramel. Mix the ingredients, then pour the starch mixture.
Keep stirring, then pour the mixture of rose water, saffron and cardamom.
Add the pistachios and keep stirring.
Divide the halwa in wooden containers or in serving bowls and leave it to cool slightly at room temperature.
Garnish with almonds and serve immediately.
