Spiced Chickpea Rice is a traditional rice dish that is widely popular across the Middle East. It's so simple and flavorful, you'll crave it at least once a week!
Wash the rice several times, and then soak it for 15 minutes.
In a deep saucepan, add the olive oil and put it over medium heat, add the onions and stir a little until light golden in color.
Add garlic and stir until light golden in color. Add the pepper and stir for several seconds.
Strain the rice and add to the onion. Stir for a few seconds to mix rice with onions.
Add chickpeas, tomatoes, parsley, mint, lemon juice, broth, salt and pepper. Lightly stir the ingredients.
Bring the rice to a boil and let it absorbs most of the broth.
Cover the rice and reduce the heat to low. Leave the rice for 30 minutes until the rice is completely cooked.
Transfer the rice to a large serving dish. Sprinkle with chopped parsley, black pepper grains and serve as a side dish with stews or grills.
