Meat Kabsa in a Pressure Cooker

Kabsa is a meat and rice main course dish that is popular not just in Saudi Arabia but across the Arab world. Learn how to make it in a pressure cooker in order to save time. This recipe is quick, easy and does not need a lot of ingredients.

 Vegetable oil: 3 tablespoons
 Chopped lamb meat: 3 lbs (1 1/2 kilograms)
 Basmati rice: 2 1/2 cups
 Water - 1 1/4 liter
 Chopped onion: 1
 Salt: to taste
 Dried lemon: 2
 Cinnamon stick: 2
 Bay leaves: 3
 Black pepper: 1 tablespoon
 Tomato juice: 3 cups

In a pressure cooker, heat the vegetable oil, then fry the onions until soft.

Add to the pot the pieces of meat, cinnamon sticks, bay leaves, dried lemon, and season with salt and black pepper.

Leave the mixture on the stove, stirring occasionally, until the meat changes color.

Pour the tomato juice and leave the mixture until it boils and thickens, then add the hot water.

Close the pot for 30 minutes. When the whistling starts, reduce the fire and remove the lid.

Add the rice and stir the ingredients. Put the lid on and close the pressure cooker again for 25 minutes, until the rice is completely done.

Pour the Kabsa onto a serving plate and serve it directly.
