Freekeh with Peas and Carrots

Freekeh recipes have a special place on the Arab table. This recipe uses toasted freekeh wheat with its distinctive nutty taste. This dish is served with salad or yogurt.

 Freekeh: 1 cup (washed and drained)
 Olive oil: 3 tablespoons
 Onions: 1 (chopped)
 Chicken broth: 1 cube
 Cardamom: 2 pods
 Salt: 1 teaspoon
 Cumin: 1/4 teaspoon
 Turmeric: a quarter of a teaspoon
 Peas and carrots: 1 cup
 Water: 1 1/4 cup

Heat the oil in a saucepan over medium heat.

Add the onion and stir for 3 minutes, then add the broth cube, cardamom, and stir.

Add the freekeh and stir for two minutes until it roasts, then add the salt, spices, turmeric, cumin and stir for an additional two minutes.

Add the peas and carrots and stir until the ingredients are homogeneous, then pour the water and let the mixture boil.

Reduce the heat, cover the pot, and leave it for 30 minutes until the freekeh is done.

Serve hot with salad or yogurt.
