This vegetable soup is a popular dish in Lebanon. It is prepared from different types of vegetables such as carrots, potatoes, zucchini, along with onions, cinnamon, salt and meat. Other vegetables can be added according to taste, or to replace meat with boiled chicken.
Chop all vegetables into small cubes and finely chop the parsley bunch.
In a saucepan over medium-high heat, put the meat and all vegetables, cover all ingredients with water and leave to boil.
Add ghee, salt and cinnamon and simmer over low heat until all ingredients are cooked.
Serve hot with toasted bread.
