Kebab with Spiced Rice

Quick and easy kebabs with spiced rice make a delicious family dinner.

To prepare kebabs:
  1 lbs (500 g) fine minced meat
  1 onion, finely chopped
  ¼ cup finely chopped parsley
  1 tsp garlic powder
  1 tsp salt
  1 tsp black pepper
  1 tsp olive oil
  1 tsp white vinegar
To prepare spiced rice:
  2 cups washed basmati rice, soaked for 15 minutes
  2 tbsp vegetable oil
  1 onion, finely chopped
  5 cardamom pods
  1 cinnamon stick
 7 cloves
  2 bay leaves
  1 tsp paprika
  1 tsp turmeric powder
  1 tsp salt
  1/2 tsp black pepper
  4 tomatoes peeled and chopped fine
  3 cups boiling water to cook rice
Prepare the Rice:

In a medium saucepan, over medium heat, add vegetable oil with onion and stir until tender, add spices, tomatoes and stir well for two minutes.

Add the soaked rice and gently stir with a wooden spoon.

Add boiling water, salt and black pepper and simmer over low heat until the rice is completely tender.

Prepare Kebabs:

Meanwhile, mix the kebab ingredients well with your hands until the mixture is firm. Wet your hands with a little water and thread kebabs on skewers

Grease the grill with vegetable oil and place kebab skewers on it turning from time to time on the other side until the kebabs are tender.

Serve with Arabic salad or yogurt.
