 1 onion, chopped into quarters
 1/2 bunch celery
 2.2 lbs (1 kg) finely chopped meat
 2 teaspoons salt
 1 teaspoon ground black pepper

In a food processor, place the chopped onion and celery and chop them until you get a smooth mixture.

Drain the onion and celery mixture in a colander and squeeze it with your hands to get rid of the largest amount of liquid, then put it in a bowl. Add the meat and mix the ingredients well.

Season with salt and black pepper, then add the flour and stir with your hands until you get a homogeneous mixture.

Cover the bowl and put it in the refrigerator for an hour.
