These rolls with zaatar (a blend of herbs, sesame seeds, sumac and salt) are crunchy and super easy. They make a perfect breakfast or appetizer with a cup of tea.
Mix yeast, milk, sugar and eggs together in a bowl. Then leave for 10-15 minutes until the yeast starts bubbling up.
Add flour and salt to the stand mixer bowl if you have one, or you can do it manually.
Add the yeast mixture to the bowl with flour, salt, and butter.
Knead the dough using the dough whisk for 5-10 minutes until it becomes smooth and flexible.
Place the dough in an oiled bowl, cover it, then put it in a warm place for about an hour and leave it until it doubles in size.
Once the dough has doubled in size, divide into two parts.
Roll out the dough into a rectangle.
Heat the oven to 375 F (190 C).
Mix thyme and olive oil in a bowl until well mixed.
Distribute half the amount of thyme and olive oil mixture to the dough rectangle.
Roll the dough into a tight roll.
Use a knife to cut the dough into about 4 cm rolls.
Arrange the rolls on a baking sheet lined with parchment paper. Cover with cling film and set aside for 30-60 minutes.
Bake on the middle rack for 15-20 minutes until the bottoms are golden brown then Turn on the broiler until the tops are golden brown. To keep the pastry soft cover with dry cloth for about 10 minutes. Enjoy.
