Arabic Ice cream (Arabic: بوظة, Booza) is a kind of ice cream with a consistency similar to mozzarella cheese. It is produced through a process of pounding and stretching in a freezer drum, instead of the more usual churning method used in other ice creams. Traditionally, booza ingredients include milk, cream, and a plant resin (mastic).
Put the cream in a mixing bowl.
Whisk cream well until it becomes brittle and creamy.
Add the ground mastic.
Add sweetened condensed milk.
Whisk again well.
Prepare the parchment paper on the surface you want to work on, and distribute ground pistachios.
Over parchment paper spread the creamy mixture on the edge of the parchment paper on top of the pistachio nuts, and roll the ice cream with parchment pepper.
Close the ends and freeze for at least 4 hours.
Remove the ice cream from the freezer and cut it into circles and serve it cold.
