The traditional way of preparing kunafa is to do it with Kunafa Dough (shredded phyllo dough) which is usually bought ready made from Middle Eastern stores. But this is a good alternative to prepare delicious kunafa with toast bread in case you can't buy it.
Remove the brown edges of the toast. Place in a food processor and mix until smooth.
In a bowl, combine bread crumbs, butter and oil. Mix well.
Filling: In a medium saucepan combine milk, mastic, flour, cornstarch, and sugar. Using a wooden spoon stir over medium heat until the sauce thickens and starts to boil. Remove from heat and keep it hot.
Preheat the oven to 375F/190C.
Spread half amount of the toast in a 10-inch round pan. Press gently on it to equal the surface.
Using a wide spoon, spread the filling to cover the toast taking into account not to reach the edges.
Spread the mozzarella cheese over the filling and then spread the rest of the toast, press gently.
Bake in the oven for 30 minutes or till golden. Remove the Kunafa from the oven and turn it on a serving plate.
Drizzle the syrup on the hot Kunafa and decorate with pistachios. Serve hot.
