Spinach Fatayer

Spinach Fatayer is a Middle Eastern pie that can alternatively be stuffed with meat, or cheese such as Feta or Akkawi. It is part of Levantine cuisine and is eaten in Lebanon, Syria, Iraq, Egypt, Jordan, and Palestine.

The dough
 3 cups All-purpose Flour
 3 tbsp Milk Powder
 1 tsp Salt
 1 tbsp Sugar
 2 tsp Active Dry Yeast
 ¼ cup Corn Oil
 1 Egg
 1 cup Warm Water
Filling
 1 lb (1/2 kg) Spinach, Chopped
 1 Large Onion, Chopped
 3 tbsp Olive Oil
 ¼ cup Lemon Juice
 1 tbsp Sumac
 ½ tsp Salt
 ¼ tsp Black Pepper
 ¼ tsp Hot Sauce

Dough: In the bowl of a large food processor fitted with a dough blade or a large bowl, combine flour, milk, salt, sugar, yeast, oil, and egg. Gradually stir in the water, until dough comes together adding a little more flour if too sticky. On a lightly greased surface, knead until smooth and elastic. Place in large bowl, cover, and let rest 1-2 hours.

Cut the dough into small size pieces. Roll out each dough piece into a circle and place in a greased tray. Cover and set aside in a warm place for 15-20 minutes

Filling: Place spinach in a large saucepan over medium heat and cook just until wilted. Once cool enough to handle, squeeze out all excess moisture. For frozen spinach, defrost and squeeze out all excess moisture. Place spinach in a bowl then add onion, oil, lemon juice, sumac, salt, pepper, and hot sauce.

Preheat oven to 375°F (190°C).

Roll out each dough piece into 2.75 inch (7 cm) circle. Place about 1 tablespoon of filling in the center of each circle and pinch the dough to form a triangle. Repeat with remaining dough and filling. Place all the Fatayer on an oiled tray. Cover and set aside for 15 minutes. Bake for about 12-15 minutes until golden. Let cool slightly before serving.
