Shorbat Adas is a very popular Middle Eastern soup of lentils during winter and Ramadan. It is a great way to start the iftar meal. It's garnished with parsley and served with crisp fried bread and lemon juice.
Soak lentils in cold water overnight. Wash and pick over. Place in pressure cooker with water to cover them about an inch.
Cook under pressure for 15 minutes.
Pass the-soup through a sieve or food mill. Add hot water to desired consistency.
Fry onions in hot olive oil until brown and add to soup. Simmer for 10 minutes. Add salt.
Garnish with chopped parsley. Serve thick and hot with lemon and squares of crisp fried bread.
