Chicken tagine is a traditional Moroccan dish made with chicken pieces braised with spices, olives, garlic, onion, parsley, coriander and lemon.
In a large bowl, mix the lemon juice with coriander, parsley, garlic, ginger, pepper, turmeric, salt and saffron.
Soak the chicken in the mixture for about seven hours in the refrigerator.
Heat the olive oil in a large heavy-bottomed Dutch oven or pan and put chicken pieces in the center and onions around.
Add olives, raisins and the water. Cover and put over medium heat.
Let it cook for about 20 minutes.
Reduce the heat and cook the chicken for about 80 minutes until cooked and then serve.
