Halawet el riz, is a traditional Arabic sweet which is made of rice, cheese and cream, sweetened with sugar syrup and garnished with pistachio.
In a saucepan over medium heat mix the rice and water. Simmer until the rice is cooked.
In a pestle and mortar, grind the sugar and the musk until smooth.
Grind cooked rice in an electric mixer, then put it in a pot over medium heat, add sugar and mix well.
Add rose water, water and mastic powder.
Add the mozzarella cheese, and stir the mixture over low heat until the cheese melts completely.
In a tray, pour the mixture and let it cool.
In a bowl, mix well ricotta cheese, whipping cream, blossom water and rose water.
To serve: Put a layer of rice and cheese mixture in a serving plate. Spread a generous amount of cream on top. Sprinkle pistachios, pour sugar syrup and serve immediately
