Hummus is a dip or spread made from cooked, mashed chickpeas blended with tahini, and lemon juice. It is popular in the Middle East and Mediterranean, as well as in Middle Eastern cuisine around the globe. It can also be found in most grocery stores in North America and Europe.
Put ice cubes in the food processor and begin to process for 2 seconds . Add chickpeas, salt, lemon juice and process for 5 more seconds. Add tahini and process for 10 more seconds. Remove the food processor cover and stir the mixture with kitchen spatula. Add the cold water as needed, cover and process to allow the machine to produce a smooth puree.
Spoon the hummus onto a serving bowl spreading with the back of a spoon to form a well in the center. Add drizzle of extra virgin olive oil. Add about 1 tablespoon of chickpeas to the middle. Garnish with parsley and sprinkle with sumac or Cyan pepper.
Serve immediately with warm pita wedges and your favorite veggies.
How to cook dry chickpeas:
1. In a bowl soak chickpeas in plenty of water overnight.
2. Drain the chickpeas from the soaking water.
3. Put chickpeas in a heavy cooking pot. Cover with 2 inches of water and bring to a boil. Reduce heat and simmer for 1 to 1 1/2 hours.
If using canned chickpeas, make sure they are drained and rinsed.
