Layered platters are common in the Levantine cuisine. Chicken Kofta Fatteh is a layered
dish of toasted pita bread, sauce, rice, yogurt and chicken kofta then garnished with pinenuts and parsley.
Rice: Wash the rice and soak it for 15 minutes. In a saucepan, heat the oil, add the rice and stir a little, then add the water and salt, put over high heat until it reaches a boil, then reduce the heat and cover the pan, leave it to simmer.
Kofta: In a bowl, place the minced chicken, onion, garlic, salt, pepper, coriander, turmeric, and mix the ingredients together. Form the kofta into approximately 2-inch balls. In a large skillet, heat the oil and add the kofta, stirring on all sides, to simmer. Put it aside.
Sauce: In the food processor, add garlic, pepper, salt, lemon juice and oil. Run to get a smooth sauce. Put it aside.
To serve: In a plate, place the bread, distribute the broth, and then some sauce, so that the bread can be well absorbed.
Spread the rice over the bread, then spread the rest of the sauce.
Spread the yogurt over the rice, then put the kofta over it.
Spread pine and parsley, then serve directly.
