Chicken Biryani

Chicken biryani is a family favorite. It is easy to prepare, aromatic, deliciously spiced and fragrant rice with tender chicken.

To prepare chicken:
 1/2 cup vegetable oil
 1 tbsp garlic, crushed
 1 tbsp fresh ginger, crushed
 3 red onions, peeled, sliced ​​and fried
 1 chicken, cleaned and cut into 4 pieces
 2 tbsp biryani spices
 5 tbsp yogurt
 1/2 cup fresh green coriander, chopped
 1/2 cup fresh mint, chopped
 1 tsp salt
 1/2 cup hot water
 3 Potatoes, peeled, diced and fried
To prepare the rice:
 2 cups basmati rice
 hot water: as needed
 2 tsp salt
 1 tsp saffron, soaked in quarter cup of hot water

To prepare the chicken: in a saucepan over the heat, stir the garlic and ginger with vegetable oil, then add a little of fried red onion and stir.

Place the chicken pieces and toss with the previous ingredients in a saucepan.

Add to the chicken, biryani spices, yogurt, a sprinkle of coriander, mint, salt, and hot water. Cover and leave to simmer. Before the chicken is cooked, add the fried cubes of potatoes.

To prepare the rice: put the basmati rice in a saucepan over heat, pour the hot water, add salt. When it is half cooked, strain from water.

Put the chicken pieces in an oven tray then bake until golden brown (optional).

Add the rice over the potatoes, sprinkle a little coriander and mint, and fried red onions.

Add saffron with hot water, and cover the pot for an additional 15 minutes until it is completely cooked.

To serve, spoon out the rice and chicken onto a large platter or shallow bowl.
