In a small bowl, mix sumac with olive oil.
In a large bowl, rub chicken with salt and black pepper.
Add the sumac and olive oil, rub well into all chicken pieces.
Place the bowl in the refrigerator for 8 hours.
Preheat the oven to 390 F.
Put the chicken and it's liquid in a roasting tin, then add the lemon juice. Bake in the oven for 1 hour or until the chicken is tender. Serve with pita bread, salad and yogurt.
