Whisk the egg whites and salt until soft.
Add almond extract, then add sugar, a small amount at a time, then mix the mixture well after Each addition until soft.
Add the chunks of dates and stir well with the meringue.
Form the meringue into 3 discs and place in a baking tray lined with baking paper.
Place the meringue in the oven at 250 F (120 ° C) for approximately 3 hours. The meringue becomes ready when easily separated from the baking paper. Cool down.
