Zaatar Manakeesh (Lebanese style pizza)

Manakish zaatar is a Middle Eastern flatbread topped with zaatar. Zaatar is a blend of different spices like -thyme, oregano, sumac, coriander, toasted sesame seeds, Marjoram, cumin and salt. This zaatar mix is mixed with generous amount of olive oil and applied on the zaatar mankeesh before baking.

 5 cups Flour
 2 tbsp Instant yeast
 2 cups Warm water
 ¼ cup Sugar
 ½ cup Vegetable oil
 ¼ tsp Salt
To prepare the filling
 1 ½ cups Dried thyme
 ¼ cup Sumac
 ¼ cup Roasted sesame
 ½ cup Olive oil
 Salt - to taste

In a bowl, add two cups of flour, yeast, sugar and salt. Add a glass of water and stir until smooth. Cover with a plastic wrap or towel and set aside at room temperature to rise for 45 minutes.

Remove the plastic wrap and add the vegetable oil and the remaining amount of flour. With your hands, knead the mixture until you get a firm dough. Cover and set aside at room temperature for 10 minutes

To prepare the filling: In a bowl, add thyme, sumac, sesame, olive oil and salt. Stir the ingredients until well mixed.

Using a rolling pin, spread the dough on the floured worktop. With a biscuit slicer, cut the dough into circles.

Heat the oven at 375 F.

Grease a baking tray with a little olive oil.

Spread the thyme mixture over the dough circles. Place on the prepared baking tray.

Bake in the preheated oven for 10-12 minutes, until the dough becomes light golden in color and puffs slightly.

Enjoy warm with cheese and vegetables, if desired.
