Tamriyeh – Authentic Palestinian Dessert from Nablus

From the city of Nablus, Palestine we have chosen for you the way to make delicious Tamriyeh filled with semolina pudding and dusted with powdered sugar.

To Prepare the Dough
 ¾ cup flour
 ¼ cup Water (or more or less as needed)
 pinch of salt (sprinkle)
To Prepare the Filling
 ½ cup coarse semolina
 ½ cup sugar
 2 cups water
For Garnish
 powdered sugar: as needed

To prepare the dough: Put the flour and salt in the electric mixer, pour the water gradually and knead constantly to get a soft non-stick paste. Continue kneading for 5 minutes.

Divide the dough into 8 equal parts.

Place the dough parts in a greased bowl with a little oil.

Cover and set aside to rest from 5 hours to 1 night.

To prepare the filling: In a saucepan, put sugar, water and semolina. Stir over medium heat until boiling. Continue stirring the mixture slightly for a thick mix.

Pour the filling into a rectangular tray, let it cool, cover and put it in the refrigerator.

Remove the filling from the refrigerator and cut into 8 equal pieces.

On a hard surface with a little oil, spread each dough section as thinly as possible.

Place a piece of the filling in the middle of each dough.

Fold a corner of the dough and place it over the filling.

Repeat the folding with the rest of the corners until all the sides of the dough are closed on the filling and get a square shape (do not tighten the dough too much on the filling).

Press lightly and carefully with the palm of your hand on the rectangle to become a bit thin.

Repeat the process with the remaining parts of the dough.

In a saucepan, heat enough oil.

Put the dough pieces in the preheated oil and fry until all sides are golden brown and crispy.

Remove from the oil.

Dust with powdered sugar and serve immediately. Enjoy!!
