Spinach Stew

The spinach stew recipe is a traditional Lebanese dish served with vermicelli rice. It is prepared from the green spinach leaves, minced meat, onions, coriander and parsley. It's healthy, delicious and easy to prepare.

 2 lbs (1 kg) spinach
 1 lbs (500 g) minced meat
 6 fresh green onion
 1 bunch of parsley
 1 bunch of coriander
 1 garlic head
 1/2 cup of lemon juice
 1 teaspoon salt
 1 tablespoon cinnamon
 1 tablespoon Arabic seven spice mix (click to see recipe)
 1/4 cup vegetable oil

Wash and chop spinach.

Finely chop the parsley and coriander, and chop the onions into small circles.

In a saucepan over medium heat, heat the oil, add onions, minced meat, salt and spices, and saute until well done.

Add the spinach and cover it with water. Leave on medium heat for 30 min. Stir occasionally. If needed add more hot water.

In a skillet, sauté garlic and coriander until tender and then add to spinach.

Finally, turn off the heat then add the parsley and lemon.

Serve with vermicelli rice.
