Shanklish Salad

Shanklish is an aged cow's milk or sheep milk cheese popular in Lebanon and Syria where it is incorporated into a salad.

 0.440 lbs (200 grams) shanklish cheese
 1 tomato (medium size)
 1 onion (medium size)
 1/2 cup of lettuce, washed, dried, and cut into bits

Finely chop the tomatoes and put them in a bowl. Finely chop the onion and add it to the tomato.

Cut the shanklish cheese into small dice and add it to the tomato and onion mixture.

Add olives and olive oil. Mix gently to combine.

Serve with pita bread on the side.
