Semolina Turmeric Cake (Sfoof)

Sfoof is a Lebanese dessert that is not overly sweet. It is pleasing to the American palate due to it's lack of rose water and orange blossom essence, found in most Middle Eastern desserts.

 1 ½ cups all-purpose flour
 ½ cup semolina flour (fine)
 1 cup sugar
 1 tbsp turmeric
 ¾ cup vegetable oil
 ½ cup dry milk
 1 cup water
 ½ tsp salt
 1 tbsp baking powder
 ¼ cup pine nuts

Preheat the oven to 425 F. Lightly coat an 8x8-inch baking pan with cooking spray, and dust the sides of the pan with about 2 tablespoons all-purpose flour.

In a large bowl, and using an electric mixer on medium speed, blend all-purpose flour, semolina flour, sugar, turmeric, vegetable oil, dry milk, water, salt, and baking powder for 2 minutes.

Pour batter into the prepared pan, and sprinkle pine nuts over top. Bake for 25 minutes or until a toothpick inserted in center of cake comes out dry.

Cool cake completely before cutting and serving.
