Saffron Rice with Meat is one of the famous meals in the Middle East, especially in the Kingdom of Saudi Arabia and the Arab Gulf countries.   It is usually served with green salad.

 3 cups basmati rice
 2.2 lbs (1 kg) lamb with bones
 1/4 tsp saffron
 2 shredded carrots
Meat marinade:
 A small cup of yogurt
 2 tsp tomato sauce
 1 tsp olive oil
 1 tsp meat spices OR Arabic Seven Spice Mix
 1/2 tsp turmeric
 Salt and Pepper
 1/2 tsp cumin and dry coriander
 1 tsp cardamom

In a deep bowl, put the meat in the marinade for a full night.

Place the meat in an oven tray covered with foil and put it in the oven at 390 F (200 C) with observation until the meat is tender. Add a cup of hot water whenever needed until the water dries and the meat is tender.

Wash the rice, then put it in a cooking pot and cover with water.

5 minutes before the rice is fully cooked, dissolve saffron in two tablespoons of water and add it to the rice and stir.

Add the grated carrots, stir, and cover the rice until done.

Transfer to a serving dish. Put the meat on top of rice. Serve hot.
