Rice with Carrots and Nuts

Rice with carrots and nuts for delicious lunch .. Rice is the staple and is used for most dishes on our Arabic table. This dish has a distinctive flavor and it's best served next to roast chicken and meat.

 2 cups basmati rice
 3 tablespoons ghee or oil
 1 tablespoon pine nuts
 1 tablespoon almonds, halfs
 1 tablespoon pistachios, halfs
 1 tablespoon raisins
 2 big carrots, grated
 2 teaspoon salt
 1/2 teaspoon cardamom
 1/4 teaspoon ground lumi
 1/4 teaspoon cumin
 1/4 teaspoon black pepper
 1/4 teaspoon crushed chili

In a deep saucepan, put an abundant amount of water. Add 1 tablespoon of salt and 1 tablespoon of corn oil. Place the pan over medium heat to a boil.

Add the rice. Allow the rice to cook for 7 to 8 minutes until the grains open, but not cooked completely. Drain the rice.

In a medium heavy bottom saucepan, put the ghee. Place the pot over medium heat.

Add the pine nuts. Stir the pine until it turns light golden in color. Transfer the pine nuts onto a piece of kitchen paper to get rid of the excess oil. Repeat with almonds, pistachios and raisins.

Add carrots To the same saucepan. Stir until softened. Don't let the carrots become dry. Add salt, cardamom, lemon, cumin, pepper and chilli. Add rice to the carrots. Reduce the heat to low. Cover the pot. Let the rice cook for 20 minutes.

Add fried nuts to the rice. Using a fork, stir the rice to mix with nuts, then serve it hot with c chicken or meat.
