Morrocan Bissara Recipe

Bissara is a popular Moroccan dish consists of fava beans, peas, and garnished with olive oil and cumin. It is easy to make, delicious, and healthy.

 1 lbs (1/2 kg) dried split fava beans (broad beans), soaked overnight
 1 lbs (1/2 kg) dried split peas, soaked overnight
 2 large onions, finely chopped
 1/2 cup parsley, finely chopped
 1/2 cup coriander, finely chopped
 Salt and pepper to taste
 5 garlic cloves
 Water for cooking
 4 tablespoons cumin, plus extra, for sprinkling
 sweet paprika, for sprinkling
 4 tablespoons olive oil

In a saucepan, add fava beans, peas, onions, garlic, parsley, coriander and cover with water. Put on high heat, cover and bring to the boil then reduce the heat to a simmer. Cook for one hour stirring occasionally. (note: You can add hot water during cooking if needed).

Remove from the heat and let it cool a little. Blend everything and put back in the saucepan for 10 minutes.

Serve in a bowl then garnish with olive oil, paprika and cumin on top.
