Meat Tagine with Potatoes is a popular Moroccan dish made with beef chunks, potatoes braised with spices, onion, parsley, coriander and green pepper.

 2 lbs Beef, cut into medium cubes
 1 cup vegetable oil
 1/2 tsp turmeric
 1 onion, finely chopped
 1 hot green pepper
 1/4 tsp paprikia
 1/4 tsp cumin
 1 lbs sweet potatoes, peeled and diced
 1 tbsp fresh parsley, chopped
 1 tbsp fresh coriander, chopped
 1 tbsp butter
 salt - to taste
 white pepper - to taste
 water - as needed

In a saucepan, heat oil and fry the meat with turmeric, salt and white pepper over medium heat for about 4 minutes or until the meat is tender.

Cover the pot well and continue cooking for an additional 15 minutes without lifting the lid.

Heat the oven at 390 F (200 ° C).

Add the onion, hot pepper, paprika and cumin to the meat.

Pour enough water to cover the meat.

Place the mixture in an oven tray, cover it well with tin foil, then put it in the oven for about 1 - 1 1/2 hour. Check the tray from time to time and add water if necessary to keep the sauce liquid.

In a saucepan, put the potatoes with water on a low heat and let them boil for 3 minutes.

Add the parsley and coriander to the meat tray and add water if the sauce is thick.

Place the potato cubes over the meat and add a piece of butter.

Cover and bake the tray for an additional 10 minutes, until the potatoes are tender.
