Meat fattah is one of the most popular types of fattah in Egypt, which is made of rice, meat, tomato sauce and toasted bread. It is one of the dishes which are prepared in gatherings as a special main dish for lunch.

 2 tbsp corn oil
 2.2 lbs (1 kg) meat habrah
 4 garlic cloves, sliced
 1 large chopped onion
 1/2 tsp black pepper
 1 tsp coriander
 1 tsp cumin
 3 tbsp tomato paste
 2 large tomatoes, peeled and chopped
 1/2 cup vinegar
 1 tsp salt
To Serve:
 2 loaves of toasted bread
 2 cups of boiled short grain rice

Heat the oil in a medium saucepan, then add the meat, and stir until it is well browned.

Add garlic, onion, pepper, coriander and cumin. Then, pour a cup of water, cover the pot, reduce the heat, and let these ingredients cook for half an hour, until the meat is slightly tender.

Add the tomato paste, chopped tomato, vinegar, and salt. Cover the pot, cook until the meat is tender, and a thick sauce is formed.

To serve: put the toasted bread in a deep dish, pour a little sauce, and distribute the boiled rice. Put the meat and the remaining amount of the sauce on top of the rice. Serve hot.
