Lamb Shish kebab

Shish kebab is a summer favorite Middle Eastern dish of skewered and grilled cubes of meat. Traditional shish kebab is made with lamb, grilled hot and fast on skewers.

 2 lbs lamb, cut into 2-inch cubes (leg of lamb if possible)
 2 medium onions, quartered
 2 bell pepper, cut into 2-inch pieces
 4 tomatoes
 salt and black pepper, to taste
 3 tbsp olive oil

Season the meat with salt and pepper then add olive oil. Mix ingredients an let it rest and come to room temperature until ready to grill.

Heat the grill to medium high heat.

Thread the skewers with pieces of meat, onion, and pepper. Make sure not to thread the meat and vegetables too tightly.

Place on the grill and cook for about 5 minutes then flip with tongs and grill another 5 minutes or until cooked. Place the tomatoes directly on the grill for a few minutes until charred and soft. Remove from the heat and let the skewers rest for 2 minutes

Remove the hot meat and vegetables from the skewers. Serve kebabs with salad and pita bread.

For best grilling results, bring the meat to room temperature for a couple of hours before cooking.
