Kunafa Rolls

Golden and Crunchy kunafa rolls filled with cream or ricotta cheese, soaked with sugar syrup and garnished with pistachios.

 1.30 lbs (600 grams) kunafa strings
 1 cup melted ghee + 1/4 cup
 0.75 lb cream or ricotta cheese
 sugar syrup
For Garnish
 ground pistachios (optional)

Preheat the oven to 180C/ 360F.

Take out a thin layer of kunafa and rewrap the rest with a damp towel to prevent drying out. Using kitchen scissors, cut strands that are about 12cm long and 5cm wide. spread it on a hard surface.

With a brush, brush the strand with a little melted ghee.

Put a tablespoon of cream or ricotta cheese on top of the Kunafa and roll the strand around itself in the form of a roll making sure the sides are well sealed and that no cheese or cream is peeking out.

Repeat with the remaining kunafa strands, until you run out of cream or ricotta cheese.

Grease a circular baking pan with ghee.

Place the kunafa roll, seam-side down, in the baking pan.

Pour the melted ghee all over the kunafa rolls, to saturate.

Bake for 15 to 20 minutes or until the kunafa rolls are golden brown, flipping the rolls to the other side during baking.

Remove from the oven and pour the cooled syrup all over the rolls.

Garnish each kunafa roll with ground pistachios. Enjoy!!
