Kofta Tagine with Tomatoes and Eggs is one of the most popular tagines in morocco made with spicy beef meatballs. Near the end of cooking, the eggs are poached perfectly in the tomato sauce and make a delicious meal.

To prepare the kofta:
 1.2 lbs (500 grams) ground beef or lamb
 1 tsp cumin
 1 1/2 tsp paprika
 1 1/2 tsp black pepper
 1 1/2 tsp salt
 2 tbsp minced parsley -
 2 onions, minced
To prepare the sauce:
 2 onions, finely chopped
 5 tomatoes, finely chopped
 4 garlic cloves, mashed
 2 tsp salt
 1 tsp black pepper
 1 tsp paprika
 2 tbsp olive oil
 2 tbsp tomato paste
 1 tbsp parsley
 3 bay leaves
 3 eggs
For garnish:
 cherry tomatoes - to taste
 chopped parsley - to taste
For frying kofta:
 4 tbsp oil

To prepare the kofta, put the meat, parsley and onions in a medium bowl.

Flavor with salt, cumin, paprika and black pepper and mix the ingredients well until you get a firm meat mixture.

Form the meat mixture into small balls of equal size.

Heat the oil in a skillet over medium heat, and fry the kofta until browned. Put aside.

To prepare the sauce, put the tomatoes, onions and garlic in a saucepan over medium heat and mix the ingredients.

Flavor with salt, black pepper, and paprika. Let the mixture simmer over medium heat.

Add tomato paste, olive oil, bay leaves and parsley.

Cover the pan and leave the ingredients to boil well until you get a firm sauce.

Add the kofta and stir the ingredients.

Make three gaps in the mixture, put the eggs in the gaps and leave for 5 minutes until done.

Decorate the kofta tagine with cherry tomatoes and parsley, then serve the dish hot.
