How to Make Musakhan

Musakhan (Arabic: مسخّن‎) is a Palestinian Arab cuisine dish, composed of roasted chicken baked with onions, sumac, allspice, saffron, and fried pine nuts served over taboon bread.

 2 chicken cut in half
 1 medium onion quarters
 2 cinnamon stick
 10 cardamom cloves
 3 bay leafs
 8.50 lbs (4 kilo) chopped onions, coarse
 3 cups olive oil
 1 tbsp salt
 1 tsp black pepper
 3 tbsp sumac
 8 Arabic loaf of bread
For Garnish
 Fried pine / sumac

 Yogurt

In a deep saucepan put the chicken and cover in water. Place the saucepan over medium heat until the chicken boils and form the foam on the surface of the water.

Add one onion, cinnamon, cardamom, bay leaf, salt and pepper. Put the chicken on medium heat for 30 minutes until cooked.

In a medium saucepan put the onion. Put the saucepan over medium heat. Stir the onion for 2 minutes. Add the oil. Cover the saucepan. Let the onion cook for 20 minutes. Add salt, pepper and sumac.

Bring a baking tray, put chicken in the tray and brush with onion's oil. Put the tray under the grill until the chicken is browned.

Dip the bread in the onion oil, stack in a round baking tray, spread the onion on the bread, sprinkle with sumac and some nuts. Repeat the process until the layers of bread are finished. Put the tray under the grill for only 3-4 minutes.

Take the bread from the baking tray and place it on a large serving dish. Serve Musakhan with yogurt.
