How to Make Beef Shawarma

Beef shawarma wrap is one of the most popular street food in the Middle East and the west behind Falafel and Hummus. It's made with thinly sliced cuts of beef, wrapped in pita or saj bread with vegetables & tahini sauce.

 2 lbs of fatty beef cuts (roast cut/steak cuts/butter steak)
For the Marinade
 4 large cloves garlic, crushed smooth
 1/4 cup olive oil
 1/3 cup vinegar
 1 tbsp meat spices
 1 tbsp ground dry coriander
 1/4 tsp black pepper
 1/2 tsp turmeric
 1 tsp cinnamon
 1 tbsp salt
 1 medium chopped tomato
 1/2 large green pepper slices
For the Tahini Sauce
 1 cup tahini
 3/4 cup water
 1/4 cup lemon juice
 2 tbsp vinegar
 1 tsp salt
 1/2 tsp ground cumin
To Serve
 1 large onion
 1/2 cup vinegar
 3-5 tbsp sumac
 approximately 1 cup chopped parsley
 Lebanese bread or Saj bread
  pickles

Cut the meat into thin long slices, set aside.

Meat mixture: In a deep glass dish put garlic, oil, vinegar, spices, coriander, black pepper, turmeric, cinnamon, salt, stir the ingredients together well then add the pieces of meat. Rub the meat with the marinade. Cover and let marinate overnight in the fridge.

Bring a medium-sized skillet, put the meat (do not put the marinade mixture) and stir on high heat to dry completely. Add the marinade mixture, add 1 cup of water, reduce the heat and leave the meat on low heat until cooked. Put on high heat and stir until it dries completely.

Add tomatoes, pepper slices, stir over low heat for a few minutes.

Tahini sauce: Put the ingredients in a deep dish and using a fork beat until the sauce forms. If the sauce is heavy, add more water and beat, put aside.

Peel onions and cut into thin slices and place in a deep dish. Add the vinegar and let it soak for about 10 minutes. Remove the vinegar before placing in the sandwiches directly.

To serve: Wipe the pita bread or saj bread with a little tahini sauce, place some beef shawarma , add some onion slices, then sprinkle some sumac and some parsley. Roll in the bread around the shawarma well, put it in a serving dish with some pickles and enjoy.
