Chicken Zurbian

Zurbian is considered as a special occasion rice dish that is usually served in weddings, during the Eid, or when important guests arrive. Surprise your taste buds with the authentic flavor of Yemeni chicken zurbian.

 3 cups basmati Rice
 2 tablespoons olive oil
 1 minced onion
 2 garlic cloves, mashed
 4 potatoes cut into cubes
 1 1/2 cup yogurt
 1 teaspoon Arabic Seven Spice Mix (click to see recipes)
 1 teaspoon salt
 cumin, sprinkle
 black pepper, sprinkle
 2 cinnamon sticks
 1 bay leaf
 1 teaspoon biryani spices
 turmeric, sprinkle
 1/2 teaspoon saffron
 6 chicken pieces
 5 cups chicken broth

Heat a little oil in a saucepan, then add onions and garlic and stir until translucent.

Add chicken and potatoes then flavor with salt, cumin, Arabic 7 spice mix, black pepper, biryani spices and turmeric.

Add bay leaf and cinnamon, then stir the ingredients and leave it until the chicken is well cooked.

Add potatoes and yogurt, then leave the mixture until it boils for about 15 minutes.

Add the rice, then pour the chicken broth. Cover the pot and cook until the rice is tender.

Dissolve the saffron with a little water, then add it over the rice mixture, and stir until the ingredients are well incorporated.

Turn the rice over a large serving dish and serve.
