Chicken Ouzi

Ouzi is a rice based dish popular in the Middle East. It is served with chicken or lamb, roasted nuts and served over rice.

 2.20 (1 kg) boiled chicken, deboned after boiled
Rice Mixture
 2 cups basmati rice
 4 tbsp corn oil
 1 large onion, finely chopped
 4 cloves garlic, mashed
 0.50 lb (250 grams) minced meat
 1 tsp Allspice
 1 tsp cinnamon
 ½ tsp black pepper
 ½ tsp fine cloves
 ½ tsp fine cardamom
 ½ tsp turmeric
 1 tsp salt
Chicken Sauce
 4 tbsp butter
 3 tbsp flour
 1 ½ cups broth
 ¼ tsp cinnamon
 ¼ tsp allspice
 ¼ tsp salt
For Garnish
 Fried nuts and pistachios

In a heated saucepan, add garlic and onions and stir for a few seconds until the onion is tender, then add meat, spices, cardamom, cinnamon, cloves, turmeric, black pepper and stir-fry the meat and spices well to taste delicious.

Add the rice and stir well with the meat mixture. Add salt, broth or water, stir gently and then cover the pot and leave it on high heat for a few minutes and then reduce the fire and leave to simmer completely.

To prepare the sauce: In a small saucepan melt the butter, then add the flour while stirring until you get a golden color and the smell of flour. Add the broth and stir using a manual mixer until the flour merges with the broth well and the sauce forms. Add allspice, salt and stir while cooking until it is firm. Add more broth to get the texture and density of the desired sauce.

Bring a mold or a suitable dish, wipe it with oil, put nuts, deboned chicken pieces and rice and press it well to form the mold. Turn over the serving dish and serve hot with sauce.
