Cauliflower Maqluba in the Oven

This version of authentic Palestinian dish (Maqluba) is baked in the oven. It consists of meat, rice and cauliflower. Serve with yogurt and a salad to mix with the rice dish.

 3 cups rice
 2 lbs lamb, cut into pieces
 1 large onion, chopped
 1 large tomato, cut into quarters
 1 cinnamon stick
 10 black peppercorns
 10 whole cardamom pods
 1 tablespoon salt
 2 bay leaves
 1 small cauliflower head

Wash the rice and change the water several times until the water becomes clear. Soak the rice in warm, salted water for about 30 minutes.

In a large saucepan, add the meat, onions, tomatoes, cinnamon, pepper, cardamom, salt bay leaves, and water. Let it cook for about an hour until the meat is tender. Drain the meat and store about 4 cups of broth (add water as needed).

Cut the cauliflower into medium pieces, and fry it in oil.

Heat the oven to 350 ° F, bring a deep oven dish.

Put the rice in the dish, spread the boiled meat over it, spread the cauliflower, add the broth, and wrap it in aluminum foil. Put it in the oven 30 - 40 minutes until it is tender. Serve Hot.
