Barazek (Sesame Pistachio Cookies)

Barazek are wonderful, thin, and crunchy sesame and pistachio cookies where one side is covered with sesame while the other is dotted with pistachios.

 3 cups of flour
 1/4 tsp salt
 1 tsp baking powder
 3/4 cup confectioners sugar
 1 large egg
 1/2 teaspoon liquid vanilla
 1/2 cup milk
 1/2 cup crushed pistachios
 1/2 cup sesame seeds
 1 large egg white

In a deep dish, sift the flour, salt and baking powder, set aside.

With an electric mixer beat the butter and the sugar until light and creamy.

Add eggs and vanilla, work on a medium speed until completely incorporated. Add the flour mixture and milk gradually, run on a medium speed until incorporated and a smooth dough forms (Don't over mix).

Place your oven rack in the middle position and preheat the oven to 350 F/180 C.

Put the dough on a piece of butter paper, put a second piece of butter paper on it. Using the rolling pin, extend the dough to a thickness of 1/2 inch. Using a round biscuit cutter, cut the dough into circles.

Put pistachios in one dish and sesame seeds in the other.

Press a circle of dough into the pistachio. Place the circles on the table with the peanut side facing down. Using a small brush, wipe the other side with egg white, then spread an abundant of sesame seeds on it.

Arrange the cookies on your baking sheet one inch apart.

Bake for 15 minutes until golden brown. Take out of the oven and leave to cool on a wire rack.
