This Okra and Meat Stew is a versatile dish, that it is made throughout various households in the Middle East and Northern Africa. In this recipe, beef cubes are used.

To prepare the meat:
 1 lbs beef stew cubes
 1 onion
 water - as needed
 1 bay leaf
 1 tbsp vegetable oil
 salt - to taste
 black pepper - sprinkle
To prepare okra:
 2 lbs green okra cleaned
 1 onion, finely chopped
 2 clove of garlic, mashed
 2 tbsp tomato paste
 2 peeled and mashed tomato
To serve:
  1/4 cup lemon juice

To prepare the meat: In a pressure cooker, heat the oil then add the beef cubes, salt, and black pepper. Put on medium-low heat and stir until the beef is cooked well on all sides then cover with hot water.

Add the whole onion and bay leaf, then cover with lid and cook over medium-high heat. Once the pressure cooker begins to whistle after 7-10 minutes, lower the heat to medium and cook for 20 minutes. After 20 minutes, turn off the heat and let pressure cooker release the steam. Set aside with the fresh broth.

To prepare the okra: in another saucepan, heat the oil and fry the chopped onions and garlic until translucent.

Add the mashed tomatoes and stir until the ingredients are mixed.

Add okra, then tomato paste.

Pour the meat broth over the okra until it is covered.

Leave the okra over the heat until tender, then add the boiled meat and stir.

Reduce heat and let the mixture boil for about 10 minutes.

Turn off the heat and pour the lemon juice.

Serve the okra stew with rice and enjoy.
