Baked Chicken with Sumac

Are you looking for a special dish that will surprise family and friends? This oven-baked chicken with sumac is an ideal chicken dish for an outdoor summer party. Sumac is dried red spice used traditionally in Middle Eastern cooking.

 1 whole chicken, about 4 lbs, jointed into 4 or 8 pieces
 salt - to taste
 1 tsp black pepper
 2 tbsp sumac
 3 tbsp olive oil
 2 tbsp lemon juice

In a small bowl, mix sumac with olive oil.

In a large bowl, rub chicken with salt and black pepper.

Add the sumac and olive oil, rub well into all chicken pieces.

Place the bowl in the refrigerator for 8 hours.

Preheat the oven to 390 F.

Put the chicken and it's liquid in a roasting tin, then add the lemon juice. Bake in the oven for 1 hour or until the chicken is tender. Serve with pita bread, salad and yogurt.
